Miss Ruth’s Zesty Baked Yellow Eye

[dropcap]T[/dropcap]his recipe was sent to us from readers, Louis and Ruth Cusack.  Thanks for sharing guys! Here is what you need for this delicious dish:
  • 2 fresh yellow eye fillets
  • ¼ cup chopped sweet onion
  • ¼ cup chopped celery
  • 2 cloves chopped garlic
  • 2 tablespoons butter
  • ½ cup mayonnaise
  • ¼ cup parmesan cheese
  • ½ teaspoon pepper
  • ½ teaspoon Cajuns Choice Creole seasoning
  • 4 slices fresh lemon
  • ½ dry dill or 1 teaspoon fresh dill
  • 2 chopped green onions for garnish
Preheat oven to 425°. Rinse off fish and pat dry with paper towels. Melt butter in a glass baking pan. Put fish into butter and turn to coat both sides. Mix up mayonnaise, parmesan cheese, pepper and Cajun's Choice Creole Seasoning. Spread over the top of the fillets. Mix together the onion, celery and garlic and then sprinkle over the top of the fillets. Place 2 slices of lemon on top of each fillet and then bake for 15-20 minutes until fish flakes easily with fork, maybe a little longer for thicker fillets. Do not overcook. 5 minutes before fish is done, sprinkle on chopped green onions to make it look pretty. *You can also get this seasoning at your local Fred Meyer.
