Cheesy Salmon Cakes - Easy Alaskan Dinner
Like any Alaskan, I love having salmon in the freezer. Even if that salmon is from last summer’s catch, this recipe is a great way to utilize those last few fillets. Not only will you make room for your new fish, filling the space in your bellies with these warm, crispy, cheesy salmon cakes is a great way to utilize your wild Alaskan salmon. Also, if you have any picky eaters that tend to shy away from fish (such as my one year old), this is a great introduction to eating salmon.

Coincidence! I just finished making a double batch right before I found this post.
I use two cans salmon
1 egg
1/3c rehydrated minced onions
3 t baking powder
1 c flour
Form into patties and fry in oil in skillet. The cheese sauce can be made using whatever kind you prefer as long as its a melting cheese. Velveeta melted with a little milk works too.

Any suggestions for the best cheese to try in this recipe? I have medium cheddar, but could snag something else.

none fresh here in AZ, but could I fudge and use canned? I know it won’t be as good, but the recipe sounds great!
