Blueberry Cake
[dropcap]I[/dropcap] am guessing that by now many of you have jumped at the chance to harvest some of the tiny fruit of the tundra, otherwise know as blueberries! You may have ended up with purple hands and an ice cream container full of bounty or, purple lips and a stomach ache. Fresh blueberries or not, you are going to want to make this simple yet delicious Blueberry Cake. You likely have all of the ingredients for this cake on hand and if you don't have berries, go buy a little carton and make it anyway because it just that good!
The following is a family recipe that is my favorite berry season treat, if you couldn't already tell this cake makes me happy so here it goes!
Ingredients:
Cake
- 2 Cups flour
- 1 Cup sugar
- 2 1/2 teaspoons baking powder
- 3/4 teaspoons salt
- 1/4 Cup oil
- 3/4 Cup Milk
- 1 egg
- 1 1/2-2 Cups of fresh Alaska blueberries (set aside)
- 1/2 Cup sugar
- 1/3 Cup flour
- 1/2 teaspoon cinnamon
- 1/4 Cup melted butter set aside
