Here’s a quick and tasty mix of ingredients I pulled from the refrigerator. I prefer on-hand ingredients, and many things can be substituted and still allow for a delicious final product. To accomplish a taste you and your family will enjoy, you may decide to add more lime, fish sauce, salt, etc. A strong mix of Thai food ingredients may not appeal to the amateur palette or first timers with Thai food. The seasoned Thai food lover may double or triple the lime and fish sauce to amplify the unique tastes of Thai. The creamy coconut milk can mute much of the flavor, and adding additional salt can cut the cream a bit and expose more flavor.

Ingredients: 2 cups smoked salmon (shredded) 1 can coconut milk 1 large sweet onion 1 lb white mushrooms 6 fresh large basil leaves 1/2 cup peanuts 6 oz. of Alaskan Brewing Company Gold Creek Ale 1 tsp. fish sauce 2 tsp. lime juice 1/2 tsp. salt 1/2 tsp. pepper 1/2 tsp. paprika Creamy Chaokoh coconut milk gives the needed thickness for your soup base Preparation: Heat skillet to medium high with oil Add sliced mushrooms and onions and brown in skillet, stir occasionally Pour coconut milk and ale into a medium saucepan Simmer coconut milk on low to medium Add fish sauce, lime, salt, pepper, paprika and basil Stir soup often and simmer for three minutes Add in smoked salmon and peanuts then continue to simmer for 2-3 minutes Sample coconut soup and make adjustments to taste Add additional lime, fish sauce and salt to amplify Thai flavors
